Ingredients
  

Pasta
  • 12 oz fettuccine or pasta of choice
Salmon
  • 1 lb salmon fillet skinless, cut into chunks
Vegetables
  • 4 cups fresh spinach washed and chopped
  • 2 cloves garlic minced
  • 1 medium onion chopped
Sauce
  • 1 cup heavy cream or half-and-half
  • 1/2 cup parmesan cheese grated
  • 1 tbsp olive oil for cooking
  • 1 tsp lemon juice freshly squeezed
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
Prepare the Salmon
  1. In a skillet, heat olive oil over medium heat. Add the salmon chunks and cook for about 5-7 minutes, or until cooked through. Remove from skillet and set aside.
Sauté Vegetables
  1. In the same skillet, add chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant. Add the spinach and cook until wilted.
Make the Sauce
  1. Pour in the heavy cream and bring to a simmer. Stir in the parmesan cheese, lemon juice, salt, and pepper. Mix well until the cheese has melted.
Combine and Serve
  1. Add the cooked pasta and salmon back into the skillet. Toss everything together until well coated in the sauce. Serve hot.

Notes
