Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Maple Cream Filling
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Method
 

Prepare the Cookie Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cookies
  1. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
  3. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Make the Maple Cream Filling
  1. In a mixing bowl, beat together the softened butter, powdered sugar, maple syrup, and vanilla extract until smooth and creamy.
Assemble the Cookies
  1. Once the cookies are completely cool, spread a generous amount of maple cream filling on the flat side of one cookie and top with another cookie to create a sandwich.
  2. Repeat with the remaining cookies and filling.
