Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Sauce
  • 1 cup chicken broth
  • 1/2 cup fresh lemon juice about 2-3 lemons
  • 1/4 cup capers drained
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare Chicken
  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat and sear the chicken for 2-3 minutes on each side until golden brown.
Make Sauce
  1. In a bowl, mix together chicken broth, lemon juice, capers, garlic, oregano, and thyme.
Cook in Crockpot
  1. Place the seared chicken in the crockpot and pour the sauce over the top.
  2. Cover and cook on low for 4 hours or until the chicken is cooked through and tender.
Serve
  1. Once cooked, remove the chicken and serve with the sauce spooned over the top.
  2. Garnish with fresh parsley before serving.
