Ingredients
  

Chicken Tenders
  • 1 pound chicken tenders trimmed and pounded to even thickness
Breading Mixture
  • 1 cup panko breadcrumbs for extra crunch
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 tablespoon dried oregano for flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Dipping Sauce
  • 1 cup Greek yogurt for creaminess
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dried dill for flavor
  • 1 clove garlic minced

Method
 

Prepare the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. Pound the chicken tenders to an even thickness using a meat mallet.
Set Up Breading Station
  1. In one bowl, place the flour mixed with salt, pepper, garlic powder, and onion powder.
  2. In a second bowl, beat the eggs.
  3. In a third bowl, combine panko breadcrumbs with dried oregano.
Bread the Chicken
  1. Dredge each chicken tender in the flour, shaking off excess.
  2. Dip into the beaten eggs, then coat with the panko mixture, pressing to adhere.
Bake the Chicken
  1. Place the breaded chicken tenders on a baking sheet lined with parchment paper.
  2. Bake for 15 minutes or until golden brown and cooked through, flipping halfway.
Make the Dipping Sauce
  1. In a small bowl, mix together Greek yogurt, lemon juice, dill, and minced garlic until smooth.
Serve
  1. Serve the crispy chicken tenders hot with the dipping sauce on the side.
