Zuppa Toscana Soup

Ingredients
  

Meat and Vegetables
  • 1 lb Italian sausage mild or spicy, casings removed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 medium potatoes sliced thinly
  • 4 cups chicken broth low sodium
  • 2 cups kale stems removed, chopped
Dairy and Seasoning
  • 1 cup heavy cream
  • 1 tsp red pepper flakes adjust to taste

Method
 

Cook the Sausage
  1. In a large pot over medium heat, add the Italian sausage and cook until browned, breaking it apart with a wooden spoon.
  2. Remove the sausage from the pot and set aside, leaving the drippings in the pot.
Sauté Vegetables
  1. In the same pot, add the diced onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
Add Potatoes and Broth
  1. Add the sliced potatoes and chicken broth to the pot, bringing to a boil.
  2. Reduce heat and simmer until the potatoes are tender, about 15 minutes.
Combine Ingredients
  1. Stir in the cooked sausage and chopped kale, cooking until the kale is wilted, about 5 minutes.
  2. Add the heavy cream, red pepper flakes, salt, and pepper, stirring to combine.
Serve
  1. Taste and adjust seasoning if necessary. Serve hot.

Notes

For a lighter version, you can substitute half-and-half for the heavy cream.
