White Lasagna with Spinach

Ingredients
  

Lasagna Layers
  • 9 sheets lasagna noodles no-boil or regular
Spinach Mixture
  • 10 ounces fresh spinach washed and chopped
  • 15 ounces ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1 large egg beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
White Sauce
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk whole or 2%
  • 1 teaspoon garlic powder
  • 1/2 teaspoon nutmeg
  • 1 cup mozzarella cheese shredded

Method
 

Prepare the Spinach Mixture
  1. In a large mixing bowl, combine the chopped spinach, ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, beaten egg, salt, and pepper. Mix well.
  2. Set aside the spinach mixture.
Make the White Sauce
  1. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until bubbly.
  2. Gradually whisk in the milk, garlic powder, and nutmeg. Cook until the sauce thickens, about 5-7 minutes.
  3. Remove from heat and stir in 1 cup of mozzarella cheese until melted.
Assemble the Lasagna
  1. Preheat the oven to 375°F (190°C).
  2. Spread a thin layer of white sauce on the bottom of a 9x13 inch baking dish.
  3. Layer 3 lasagna noodles over the sauce, followed by half of the spinach mixture, and then a layer of white sauce. Repeat the layers, finishing with noodles and white sauce on top.
  4. Sprinkle remaining mozzarella cheese on top.
Bake the Lasagna
  1. Cover the baking dish with aluminum foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 20 minutes until the top is golden and bubbly.
  3. Allow to cool for 10 minutes before slicing and serving.

Notes

For a richer flavor, you can add cooked ground meat or mushrooms to the spinach mixture.
