  • 2 tablespoons olive oil extra virgin
  • 2 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 1 cup milk whole or 2%
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground
  • 1/4 teaspoon nutmeg optional
Cheese
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup mozzarella cheese shredded

Method
 

Prepare the Sauce
  1. In a saucepan, heat the olive oil over medium heat.
  2. Add minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  3. Stir in the flour and cook for another minute to form a roux.
  4. Gradually whisk in the milk and heavy cream, ensuring there are no lumps.
  5. Continue to cook, stirring constantly, until the sauce thickens, about 5-7 minutes.
  6. Add salt, black pepper, nutmeg, Parmesan, and mozzarella cheese, stirring until melted and smooth.
  7. Remove from heat and let it cool slightly before using on pizza.
