- Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
- Mash the sweet potatoes in a bowl until smooth.
- In another bowl, whisk together flour, baking powder, and salt.
- In a large bowl, mix melted butter and sugar until creamy. Add mashed sweet potatoes and milk; stir until combined.
- Fold in the chopped herbs and gradually add dry ingredients, mixing just until combined.
- Spoon batter into muffin tins, filling about two-thirds full. Bake for 20-25 minutes until golden brown, and a toothpick comes out clean.
