Ingredients
  

  • 2 medium sweet potatoes about 1 cup mashed
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¼ cup fresh herbs finely chopped (rosemary or thyme)
  • ½ cup unsalted butter melted
  • ¾ cup milk dairy or non-dairy
  • ½ cup granulated sugar

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. Mash the sweet potatoes in a bowl until smooth.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, mix melted butter and sugar until creamy. Add mashed sweet potatoes and milk; stir until combined.
  5. Fold in the chopped herbs and gradually add dry ingredients, mixing just until combined.
  6. Spoon batter into muffin tins, filling about two-thirds full. Bake for 20-25 minutes until golden brown, and a toothpick comes out clean.
