Crust
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter cold, cut into cubes
Filling
  • 1 cup fresh strawberries diced
  • 1 cup rhubarb diced
  • 3/4 cup granulated sugar for filling
  • 1 tbsp lemon juice
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tbsp cornstarch

Preparation
  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix flour, sugar, and salt. Incorporate cold butter until the mixture resembles coarse crumbs.
  3. Press the crust mixture into the prepared dish and bake for 15 minutes until golden.
Filling
  1. In another bowl, combine diced strawberries, rhubarb, sugar, lemon juice, and cornstarch for the filling.
  2. Pour the fruit mixture over the baked crust evenly.
  3. Bake again for 30-35 minutes until bubbly and golden brown on top.
  4. Allow cooling before slicing into squares.
