Method
Prepare the Filling
- In a mixing bowl, combine chopped spinach, artichoke hearts, cream cheese, sour cream, parmesan cheese, minced garlic, salt, and black pepper. Mix until well combined.
- Set the filling aside.
Assemble the Sandwiches
- Spread butter on one side of each slice of bread.
- On the unbuttered side of half the slices, spread a generous amount of the spinach artichoke filling.
- Top with shredded cheddar cheese and place another slice of bread on top, buttered side out.
Cook the Sandwiches
- Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
- Remove from skillet and let cool for a minute before slicing.
