Method
Prepare the Pasta
- Cook spaghetti according to package instructions until al dente. Drain and set aside.
- In a large pot, combine cooked spaghetti with chicken broth and shredded chicken.
Make the Cheese Sauce
- In a skillet over medium heat, sauté diced bell pepper and onion until softened, about 5 minutes.
- Add cream cheese, sour cream, hot sauce, garlic powder, and onion powder to the skillet. Stir until smooth.
- Mix in shredded cheddar and monterey jack cheese until melted and well combined.
Combine and Bake
- Pour the cheese sauce over the spaghetti and chicken mixture. Stir until evenly coated.
- Transfer the mixture to a greased casserole dish.
- In a small bowl, mix bread crumbs with olive oil and sprinkle over the top of the casserole.
- Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until bubbly and golden brown.
Serve
- Remove from oven and let cool for a few minutes. Garnish with chopped parsley before serving.
