Ingredients
  

Pasta and Chicken
  • 8 oz spaghetti uncooked
  • 2 cups cooked chicken shredded
  • 1 cup chicken broth low sodium
Cheese Sauce
  • 1 cup cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 1 cup monterey jack cheese shredded
  • 1/2 cup sour cream
  • 1 tbsp hot sauce adjust to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
Vegetables
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 1 cup jalapeños sliced, optional
Toppings
  • 1/2 cup bread crumbs for topping
  • 1 tbsp olive oil for bread crumbs
  • 1 tbsp parsley chopped, for garnish

Method
 

Prepare the Pasta
  1. Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large pot, combine cooked spaghetti with chicken broth and shredded chicken.
Make the Cheese Sauce
  1. In a skillet over medium heat, sauté diced bell pepper and onion until softened, about 5 minutes.
  2. Add cream cheese, sour cream, hot sauce, garlic powder, and onion powder to the skillet. Stir until smooth.
  3. Mix in shredded cheddar and monterey jack cheese until melted and well combined.
Combine and Bake
  1. Pour the cheese sauce over the spaghetti and chicken mixture. Stir until evenly coated.
  2. Transfer the mixture to a greased casserole dish.
  3. In a small bowl, mix bread crumbs with olive oil and sprinkle over the top of the casserole.
  4. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until bubbly and golden brown.
Serve
  1. Remove from oven and let cool for a few minutes. Garnish with chopped parsley before serving.

Notes
