Prepare the Soup
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sliced jalapeños, cooking for an additional 2 minutes until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Stir in the shredded chicken, cream cheese, and heavy cream. Mix until the cream cheese is fully melted and incorporated.
- Season with cumin, smoked paprika, salt, and black pepper. Let the soup simmer for 15 minutes.
- Serve hot, topped with shredded cheddar cheese and sliced green onions.
