Ingredients
  

Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups chicken broth low sodium
  • 2 cups cooked chicken shredded
  • 1 cup cream cheese softened
  • 1 cup heavy cream for creaminess
  • 2 cups jalapeños sliced, seeds removed for less heat
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 cup shredded cheddar cheese for topping
  • 1 cup green onions sliced, for garnish

Method
 

Prepare the Soup
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and sliced jalapeños, cooking for an additional 2 minutes until fragrant.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the shredded chicken, cream cheese, and heavy cream. Mix until the cream cheese is fully melted and incorporated.
  5. Season with cumin, smoked paprika, salt, and black pepper. Let the soup simmer for 15 minutes.
  6. Serve hot, topped with shredded cheddar cheese and sliced green onions.

Notes
