Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken thighs cut into bite-sized pieces
  • 2 tbsp honey for sweetness
  • 2 tbsp soy sauce for flavor
  • 1 tbsp fresh ginger grated
  • 1 tbsp sriracha for heat
  • 1 tbsp olive oil for cooking
  • 1 tsp garlic powder
Yum Yum Sauce
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp sugar
  • 1 tbsp rice vinegar
  • 1 tsp garlic powder
  • 1 tsp paprika
Rice and Toppings
  • 2 cups cooked rice white or brown
  • 1 cup steamed broccoli
  • 1 cup shredded carrots
  • 1/4 cup green onions sliced
  • 1/4 cup sesame seeds for garnish

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine honey, soy sauce, grated ginger, sriracha, and garlic powder. Add chicken pieces and marinate for at least 15 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add marinated chicken and cook for 8-10 minutes until fully cooked and slightly caramelized.
Make the Yum Yum Sauce
  1. In a small bowl, whisk together mayonnaise, ketchup, sugar, rice vinegar, garlic powder, and paprika until smooth.
Assemble the Bowls
  1. Divide cooked rice among four bowls. Top with cooked chicken, steamed broccoli, and shredded carrots.
  2. Drizzle with Yum Yum sauce and sprinkle with green onions and sesame seeds before serving.

Notes

Feel free to adjust the spice level by adding more or less sriracha. You can also substitute chicken with tofu for a vegetarian option.
