Ingredients
  

Chicken and Marinade
  • 3-4 breasts boneless, skinless chicken
  • 3 cloves fresh garlic minced
  • 2 tbsp olive oil
  • 2 tsp cumin powder
  • 2 tsp smoked paprika
  • Salt and pepper to taste
Yogurt Sauce
  • 1 cup full-fat Greek yogurt
  • 1 medium cucumber grated
  • 1 lemon Juice of
  • ¼ cup fresh herbs parsley or mint, chopped
  • Chili flakes optional

Method
 

Preparation
  1. Marinate the chicken in olive oil, garlic, cumin, paprika, salt, and pepper for at least 30 minutes.
  2. Preheat the grill to medium-high or oven to 375°F (190°C). Cook chicken until golden brown—6-7 minutes per side on the grill or 25-30 minutes in the oven.
  3. While cooking, mix Greek yogurt with grated cucumber, lemon juice, salt, pepper, and chili flakes in a bowl.
  4. Chop fresh herbs and mix into the yogurt sauce just before serving.
  5. Slice the cooked chicken and serve over mixed greens with a generous drizzle of yogurt sauce.
