Prepare the Chickpea Mixture
- In a mixing bowl, add the drained chickpeas and mash them with a fork until chunky.
- Add the ripe avocado, dill pickles, lemon juice, dijon mustard, fresh dill, salt, and black pepper to the bowl.
- Mix everything together until well combined but still chunky.
Assemble the Sandwiches
- Toast the slices of whole grain bread to your liking.
- Spread a generous amount of the chickpea mixture on one slice of toasted bread.
- Top with a lettuce leaf and a few slices of tomato.
- Place another slice of bread on top to complete the sandwich.
- Repeat with the remaining ingredients to make additional sandwiches.
