Ingredients
  

Chickpea Mixture
  • 1 can chickpeas drained and rinsed
  • 1 medium avocado ripe
  • 2 tablespoons dill pickles finely chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dijon mustard
  • 1 tablespoon fresh dill chopped
  • to taste salt
  • to taste black pepper
Sandwich Assembly
  • 8 slices whole grain bread or bread of choice
  • 4 leaves romaine lettuce
  • 1 medium tomato sliced

Method
 

Prepare the Chickpea Mixture
  1. In a mixing bowl, add the drained chickpeas and mash them with a fork until chunky.
  2. Add the ripe avocado, dill pickles, lemon juice, dijon mustard, fresh dill, salt, and black pepper to the bowl.
  3. Mix everything together until well combined but still chunky.
Assemble the Sandwiches
  1. Toast the slices of whole grain bread to your liking.
  2. Spread a generous amount of the chickpea mixture on one slice of toasted bread.
  3. Top with a lettuce leaf and a few slices of tomato.
  4. Place another slice of bread on top to complete the sandwich.
  5. Repeat with the remaining ingredients to make additional sandwiches.
