Ingredients
  

Oatmeal Base
  • 2 cups rolled oats
  • 4 cups water or milk for creaminess
  • 1 cup canned pumpkin puree not pumpkin pie filling
  • 1 teaspoon vanilla extract
Spices and Sweeteners
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup brown sugar or maple syrup to taste
  • 1/2 teaspoon salt
Toppings (optional)
  • 1/4 cup chopped nuts such as pecans or walnuts
  • 1/4 cup dried cranberries
  • 1/2 cup milk for serving

Method
 

Prepare the Slow Cooker
  1. In the slow cooker, combine the rolled oats, water (or milk), pumpkin puree, and vanilla extract.
  2. Add the pumpkin pie spice, brown sugar, and salt, and stir until well combined.
Cook the Oatmeal
  1. Cover and cook on low for 4 hours, stirring occasionally if possible.
Serve
  1. Once cooked, stir the oatmeal and serve warm, topped with nuts, dried cranberries, and a splash of milk if desired.
