Ingredients
  

Pulled Pork
  • 2 lbs pork shoulder boneless
  • 1 cup barbecue sauce your favorite brand
  • 1 tbsp brown sugar packed
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
Bowls Toppings
  • 2 cups cooked rice white or brown
  • 1 cup corn canned or frozen
  • 1 cup black beans canned, rinsed and drained
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1 cup sour cream optional
  • 1 cup sliced green onions for garnish
  • 1 cup fresh cilantro for garnish

Method
 

Prepare the Pork
  1. In a small bowl, mix together brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Rub the spice mixture all over the pork shoulder.
Cook the Pork
  1. Place the seasoned pork shoulder in the slow cooker.
  2. Pour barbecue sauce over the pork.
  3. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.
Prepare the Bowls
  1. Once the pork is cooked, shred it using two forks and mix it with the barbecue sauce in the slow cooker.
  2. In serving bowls, layer cooked rice, pulled pork, corn, black beans, shredded cheese, sour cream, green onions, and cilantro.
