Preparation
- Place the chicken breasts in the slow cooker.
- Add the chopped onion, garlic, and bell pepper on top of the chicken.
- In a separate bowl, mix together the chicken broth, olive oil, lemon juice, oregano, thyme, salt, and pepper.
- Pour the mixture over the chicken and vegetables in the slow cooker.
Cooking
- Cover and cook on low for 6 hours or until the chicken is tender and cooked through.
- During the last 30 minutes of cooking, add the feta cheese and olives to the slow cooker.
Serving
- Once cooked, shred the chicken with two forks and stir to combine with the sauce.
- Serve warm, garnished with additional feta and olives if desired.
