Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Vegetables
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup chopped bell pepper
Liquids and Sauces
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
Spices and Seasonings
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Toppings
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup kalamata olives, pitted

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker.
  2. Add the chopped onion, garlic, and bell pepper on top of the chicken.
  3. In a separate bowl, mix together the chicken broth, olive oil, lemon juice, oregano, thyme, salt, and pepper.
  4. Pour the mixture over the chicken and vegetables in the slow cooker.
Cooking
  1. Cover and cook on low for 6 hours or until the chicken is tender and cooked through.
  2. During the last 30 minutes of cooking, add the feta cheese and olives to the slow cooker.
Serving
  1. Once cooked, shred the chicken with two forks and stir to combine with the sauce.
  2. Serve warm, garnished with additional feta and olives if desired.
