Method
Prepare the Batter
- Preheat the oven to 350°F (175°C). Grease a baking pan.
- In a mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Bake the Bars
- Pour the batter into the prepared baking pan and spread evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
