Ingredients
  

Proteins
  • 1 lb shrimp, peeled and deveined preferably large shrimp
  • 1 lb andouille sausage, sliced or any smoked sausage
Vegetables
  • 1 cup onion, diced
  • 1 cup green bell pepper, diced
  • 1 cup celery, diced
  • 3 cloves garlic, minced
Grains
  • 2 cups long-grain rice uncooked
Liquids
  • 4 cups chicken broth or stock
Spices
  • 1 tbsp Cajun seasoning
  • 1 tsp black pepper
  • 1 tsp salt to taste
  • 1 tsp thyme dried
Others
  • 2 tbsp olive oil for cooking
  • 2 tbsp parsley, chopped for garnish

Method
 

Prepare the Ingredients
  1. Dice the onion, green bell pepper, and celery. Mince the garlic.
  2. Slice the andouille sausage and set aside.
Cook the Sausage
  1. In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
Add Vegetables
  1. Add the diced onion, bell pepper, celery, and minced garlic to the skillet. Sauté until the vegetables are soft, about 5-7 minutes.
Add Rice and Broth
  1. Stir in the rice, Cajun seasoning, thyme, salt, and black pepper. Pour in the chicken broth and bring to a boil.
Simmer
  1. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and has absorbed the liquid.
Add Shrimp
  1. Stir in the shrimp and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.
Serve
  1. Remove from heat, garnish with chopped parsley, and serve hot.
