Cook the Rice
- In a medium saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed.
Prepare the Shrimp
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add shrimp, lime juice, salt, and black pepper. Cook for 3-4 minutes until shrimp are pink and opaque.
Assemble the Bowl
- In a mixing bowl, fluff the cooked rice with a fork. Divide rice among four bowls.
- Top each bowl with cooked shrimp, sliced avocado, diced mango, red onion, and cilantro.
- Serve with lime wedges on the side.
