Ingredients
  

Rice Base
  • 1 cup jasmine rice or any preferred rice
  • 2 cups water
Shrimp
  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp garlic minced
  • 1 tsp lime juice
  • 1 tsp salt
  • 1/2 tsp black pepper
Toppings
  • 1 medium avocado sliced
  • 1 medium mango diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Cook the Rice
  1. In a medium saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed.
Prepare the Shrimp
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add shrimp, lime juice, salt, and black pepper. Cook for 3-4 minutes until shrimp are pink and opaque.
Assemble the Bowl
  1. In a mixing bowl, fluff the cooked rice with a fork. Divide rice among four bowls.
  2. Top each bowl with cooked shrimp, sliced avocado, diced mango, red onion, and cilantro.
  3. Serve with lime wedges on the side.
