Ingredients
  

Shrimp
  • 1 pound large shrimp peeled and deveined
Fruits and Vegetables
  • 1 medium ripe avocado diced
  • 1 medium ripe mango diced
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red bell pepper diced
Seasoning and Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup fresh cilantro chopped

Method
 

Cook the Shrimp
  1. Heat olive oil in a skillet over medium heat. Add shrimp, garlic powder, cumin, salt, and pepper. Cook for 3-4 minutes until shrimp are pink and cooked through.
Prepare the Bowl
  1. In a mixing bowl, combine diced avocado, mango, cherry tomatoes, cucumber, red bell pepper, lime juice, and cilantro. Gently toss to combine.
Assemble the Bowls
  1. Divide the fruit and vegetable mixture among four bowls. Top each bowl with cooked shrimp. Serve immediately.
