Ingredients
  

Brownie Base
  • 1 cup grated zucchini excess moisture squeezed out
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup whole wheat flour
  • 1/4 cup honey or maple syrup for sweetness
  • 1/4 cup coconut oil melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Optional Toppings
  • 1/4 cup chocolate chips for extra sweetness
  • 2 tablespoons chopped nuts optional

Method
 

Prepare the Zucchini
  1. Grate the zucchini using a box grater and squeeze out excess moisture with a clean kitchen towel.
Mix the Ingredients
  1. In a mixing bowl, combine the grated zucchini, cocoa powder, whole wheat flour, honey or maple syrup, melted coconut oil, egg, vanilla extract, baking powder, and salt. Mix until well combined.
Prepare the Baking Pan
  1. Preheat the oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
Bake the Brownies
  1. Pour the brownie batter into the prepared baking pan and spread it evenly. If desired, sprinkle chocolate chips and chopped nuts on top.
  2. Bake in the preheated oven for 25 minutes, or until a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Allow the brownies to cool in the pan for 10 minutes before slicing into squares and serving.
