Ingredients
  

Pulled Pork
  • 2 lbs pork shoulder trimmed and cut into chunks
  • 1 tbsp olive oil for searing
  • 1 tbsp smoked paprika
  • 1 tbsp cumin
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup chicken broth
Bowl Components
  • 2 cups cooked rice white or brown
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 avocado sliced
  • 1 cup sour cream for topping
  • 1 lime cut into wedges for serving

Method
 

Prepare the Pulled Pork
  1. Heat olive oil in a skillet over medium-high heat. Sear the pork chunks until browned on all sides, about 5-7 minutes.
  2. Transfer the pork to a slow cooker. In a small bowl, mix smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture over the pork.
  3. Pour chicken broth into the slow cooker. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.
  4. Once cooked, shred the pork with two forks and mix it with the juices in the slow cooker.
Assemble the Burrito Bowls
  1. In each serving bowl, add a base of cooked rice.
  2. Top the rice with black beans, corn, shredded pork, cherry tomatoes, shredded lettuce, and shredded cheese.
  3. Add sliced avocado and a dollop of sour cream on top.
  4. Serve with lime wedges on the side for squeezing over the bowl.
