Prepare the Pulled Pork
- Heat olive oil in a skillet over medium-high heat. Sear the pork chunks until browned on all sides, about 5-7 minutes.
- Transfer the pork to a slow cooker. In a small bowl, mix smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture over the pork.
- Pour chicken broth into the slow cooker. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.
- Once cooked, shred the pork with two forks and mix it with the juices in the slow cooker.
Assemble the Burrito Bowls
- In each serving bowl, add a base of cooked rice.
- Top the rice with black beans, corn, shredded pork, cherry tomatoes, shredded lettuce, and shredded cheese.
- Add sliced avocado and a dollop of sour cream on top.
- Serve with lime wedges on the side for squeezing over the bowl.
