  • 1 lb Italian sausage sliced
  • 2 medium sweet potatoes peeled and cubed
  • 1 tbsp olive oil for cooking
  • 1 cup broccoli florets optional
Honey Garlic Sauce
  • 1/4 cup honey
  • 3 tbsp soy sauce low sodium
  • 2 cloves garlic minced
  • 1 tbsp apple cider vinegar
  • 1/2 tsp red pepper flakes optional

Method
 

Prepare the Ingredients
  1. Slice the Italian sausage and peel and cube the sweet potatoes.
  2. Mince the garlic and measure out the honey, soy sauce, apple cider vinegar, and red pepper flakes.
Cook the Sausage and Sweet Potatoes
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the sliced sausage and cook until browned, about 5-7 minutes.
  3. Add the cubed sweet potatoes and stir to combine. Cook for another 10-12 minutes, stirring occasionally, until sweet potatoes are tender.
Make the Honey Garlic Sauce
  1. In a small bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, and red pepper flakes.
Combine and Serve
  1. Once the sweet potatoes are tender, pour the honey garlic sauce over the sausage and sweet potatoes, stirring to coat evenly.
  2. If using, add broccoli florets and cook for an additional 3-5 minutes until heated through.
  3. Serve hot and enjoy!
