Ingredients
  

Salmon
  • 4 fillets salmon skinless
Salad Base
  • 8 cups mixed greens such as romaine and spinach
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 avocado avocado sliced
  • 1 cup blue cheese crumbled
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salmon
  1. Preheat the grill to medium-high heat.
  2. Season the salmon fillets with salt and pepper.
  3. Grill the salmon for about 4-5 minutes on each side, or until cooked through.
Make the Dressing
  1. In a mixing bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, avocado, and blue cheese.
  2. Flake the grilled salmon and add it to the salad.
  3. Drizzle the dressing over the salad and toss gently to combine.
