Salmon Balls
  • 1 lb fresh salmon fillet skinless, diced
  • 1 cup breadcrumbs preferably panko
  • 1 large egg beaten
  • 2 tbsp fresh parsley chopped
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Creamy Avocado Sauce
  • 1 large ripe avocado peeled and pitted
  • 1 tbsp lime juice freshly squeezed
  • 1 clove garlic minced
  • 1/4 cup Greek yogurt or sour cream
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

Prepare Salmon Balls
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the diced salmon, breadcrumbs, beaten egg, parsley, lemon juice, garlic powder, onion powder, salt, and pepper.
  3. Mix until well combined, then form the mixture into small balls, about 1 inch in diameter.
  4. Place the salmon balls on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 12-15 minutes, or until golden brown and cooked through.
Make Creamy Avocado Sauce
  1. In a food processor, combine the avocado, lime juice, garlic, Greek yogurt, salt, and pepper.
  2. Blend until smooth and creamy, adjusting seasoning to taste.
Serve
  1. Serve the salmon balls warm with the creamy avocado sauce on the side for dipping.

Notes
