Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Filling
  • 1 cup fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped packed in oil, drained
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil for drizzling

Method
 

Prepare the Filling
  1. In a mixing bowl, combine chopped spinach, feta cheese, sun-dried tomatoes, minced garlic, and oregano. Mix well.
Prepare the Chicken
  1. Preheat the oven to 375°F (190°C).
  2. Using a meat mallet, gently pound the chicken breasts to an even thickness.
Assemble the Rolls
  1. Place a portion of the filling on each chicken breast and roll them up tightly. Secure with toothpicks if necessary.
Bake the Chicken
  1. Place the rolled chicken in a baking dish. Drizzle with olive oil and season with salt and pepper.
  2. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
Serve
  1. Remove from the oven, let rest for a few minutes, then slice and serve warm.
