Ingredients
  

Spaghetti Squash
  • 1 medium spaghetti squash halved and seeds removed
Shrimp
  • 1 pound large shrimp peeled and deveined
Sauce Ingredients
  • 4 tablespoons butter divided
  • 4 cloves garlic minced
  • 1/4 cup dry white wine or chicken broth
  • 1 lemon juice freshly squeezed
  • 1/4 teaspoon red pepper flakes optional
  • 1/4 cup fresh parsley chopped for garnish
Seasoning
  • salt to taste salt
  • pepper to taste black pepper

Method
 

Prepare Spaghetti Squash
  1. Preheat the oven to 400°F (200°C). Place the halved spaghetti squash cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  2. Once cooked, use a fork to scrape the flesh into spaghetti-like strands.
Cook Shrimp
  1. In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add the shrimp, season with salt and pepper, and cook for about 3-4 minutes until they turn pink.
  3. Pour in the white wine and lemon juice, and add red pepper flakes if using. Cook for an additional 2 minutes.
Combine and Serve
  1. Add the spaghetti squash strands to the skillet and toss to combine with the shrimp and sauce.
  2. Remove from heat, stir in remaining butter and garnish with fresh parsley before serving.
