Ingredients
  

For the Bruschetta
  • 4 slices French baguette or any crusty bread
  • 2 medium ripe peaches diced
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon balsamic glaze for drizzling
  • 1 pinch salt
For the Whipped Ricotta
  • 1 cup ricotta cheese whole milk ricotta preferred
  • 1 tablespoon honey or to taste
  • 1 teaspoon vanilla extract optional
  • 1 pinch salt

Method
 

Prepare the Bread
  1. Preheat the oven to 400°F (200°C).
  2. Place the baguette slices on a baking sheet and drizzle with olive oil.
  3. Toast in the oven for about 5 minutes or until golden brown.
Make the Whipped Ricotta
  1. In a mixing bowl, combine ricotta cheese, honey, vanilla extract, and salt.
  2. Using an electric mixer, whip the mixture until smooth and creamy.
Assemble the Bruschetta
  1. Spread a generous amount of whipped ricotta on each toasted baguette slice.
  2. Top with diced peaches and drizzle with balsamic glaze.
  3. Sprinkle a pinch of salt on top for added flavor.
