Ingredients
  

Pumpkin Filling
  • 1 can pumpkin puree 15 oz
  • 1 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup evaporated milk
Crisp Topping
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/4 cup unsalted butter melted
  • 1/2 teaspoon cinnamon

Method
 

Prepare the Pumpkin Filling
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, sugar, cinnamon, nutmeg, ginger, salt, eggs, and evaporated milk. Whisk until smooth.
Make the Crisp Topping
  1. In another bowl, mix oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
Assemble and Bake
  1. Pour the pumpkin filling into a greased 9x9 inch baking dish.
  2. Sprinkle the crisp topping evenly over the pumpkin filling.
  3. Bake in the preheated oven for 45 minutes, or until the filling is set and the topping is golden brown.
Serve
  1. Allow to cool slightly before serving. Enjoy warm, optionally with whipped cream.
