Ingredients
  

Pumpkin Bread
  • 1 cup canned pumpkin puree not pumpkin pie filling
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
Maple Glaze
  • 1 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon milk adjust for consistency

Method
 

Prepare the Pumpkin Bread
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Make the Maple Glaze
  1. In a small bowl, whisk together the powdered sugar, maple syrup, and milk until smooth.
  2. Once the bread is completely cool, drizzle the maple glaze over the top.
  3. Let the glaze set for a few minutes before slicing.
