Ingredients
  

  • 1 package frozen puff pastry sheets (17.3 oz, 2 sheets)
  • 2 cups fresh strawberries hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp cornstarch
  • 1 egg for egg wash

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine sliced strawberries, sugar, and vanilla. Toss gently.
  3. Sprinkle cornstarch over the mixture and stir until evenly coated.
  4. Roll out thawed puff pastry on a floured surface; cut into rectangles.
  5. Place a spoonful of strawberry filling on one end of each rectangle, fold over, and seal edges.
  6. Brush tops with beaten egg for a golden finish.
  7. Bake for 15-20 minutes until puffed and golden brown.
