  • 4 cups water or chicken broth
  • 1 teaspoon salt
  • 1 teaspoon black peppercorns
  • 2 slices ginger fresh
For the Scallion Ginger Sauce
  • 4 tablespoons soy sauce low sodium
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 4 scallions sliced green parts only
  • 1 tablespoon fresh ginger minced
  • 1 teaspoon sugar optional

Method
 

Poach the Chicken
  1. In a large pot, combine water (or chicken broth), salt, peppercorns, and ginger slices. Bring to a simmer over medium heat.
  2. Add the chicken breasts to the pot, ensuring they are submerged. Cover and poach for 15-20 minutes until cooked through.
  3. Remove the chicken from the pot and let it rest for a few minutes before slicing.
Prepare the Scallion Ginger Sauce
  1. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, sliced scallions, minced ginger, and sugar (if using).
  2. Taste and adjust seasoning if necessary.
Serve
  1. Slice the poached chicken and arrange it on a serving dish. Drizzle with scallion ginger sauce.
  2. Garnish with additional scallions if desired and serve warm.
