Pizza Quesadillas

Ingredients
  

Quesadilla Base
  • 4 large flour tortillas or corn tortillas
Pizza Filling
  • 1 cup shredded mozzarella cheese can substitute with other cheese
  • 1 cup pepperoni slices or any preferred toppings
  • 1/2 cup pizza sauce for dipping
  • 1/2 cup sliced bell peppers optional
  • 1/2 cup sliced olives optional
Cooking
  • 2 tablespoons olive oil for frying

Method
 

Prepare the Quesadillas
  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle half of the mozzarella cheese evenly over it.
  3. Add pepperoni slices, bell peppers, and olives on top of the cheese.
  4. Sprinkle the remaining mozzarella cheese over the toppings and cover with another tortilla.
Cook the Quesadillas
  1. Cook for 3-4 minutes until the bottom tortilla is golden brown.
  2. Carefully flip the quesadilla using a spatula and add the remaining olive oil to the skillet.
  3. Cook for another 3-4 minutes until the other side is golden and the cheese is melted.
  4. Remove from skillet and let cool for a minute before cutting into wedges.
Serve
  1. Serve warm with pizza sauce on the side for dipping.
