Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter melted
Filling
  • 1 cup shelled pistachios
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream
  • 2 tsp pure vanilla extract
Toppings
  • ½ cup chopped pistachios for topping
  • 2 tbsp powdered sugar for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8 inch baking dish with parchment paper.
  2. In a bowl, combine graham cracker crumbs and melted butter until moistened. Press firmly into the bottom of the prepared dish to form a crust.
Filling
  1. In another bowl, whip heavy cream until soft peaks form. Fold in sweetened condensed milk and vanilla extract until smooth.
  2. Gently fold in chopped pistachios into the cream mixture.
Baking
  1. Pour the filling over the crust and bake for 25-30 minutes until set and lightly golden around the edges.
  2. Allow to cool completely before slicing into squares. Top with chopped pistachios and powdered sugar before serving.

Notes
