Ingredients
  

Chicken and Marinade
  • 1 lb boneless chicken breast cut into bite-sized pieces
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
Vegetables and Rice
  • 1 cup long-grain rice uncooked
  • 1 cup pineapple chunks fresh or canned
  • 1 cup bell pepper diced
  • 1 cup snap peas trimmed
  • 2 tbsp vegetable oil
Garnish
  • 2 tbsp green onions sliced
  • 1 tbsp sesame seeds optional

Method
 

Prepare the Chicken
  1. In a bowl, combine soy sauce, honey, rice vinegar, and cornstarch. Add chicken pieces and marinate for at least 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 7-10 minutes.
Cook the Rice
  1. While the chicken is cooking, prepare the rice according to package instructions.
Add Vegetables and Pineapple
  1. Once the chicken is cooked, add the diced bell pepper and snap peas to the skillet. Stir-fry for about 3-4 minutes until vegetables are tender.
  2. Add the pineapple chunks and stir to combine. Cook for an additional 2 minutes.
Combine and Serve
  1. Serve the chicken and vegetable mixture over the cooked rice. Garnish with sliced green onions and sesame seeds if desired.

Notes
