Method
Prepare the Chicken
- In a bowl, combine soy sauce, honey, rice vinegar, and cornstarch. Add chicken pieces and marinate for at least 15 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 7-10 minutes.
Cook the Rice
- While the chicken is cooking, prepare the rice according to package instructions.
Add Vegetables and Pineapple
- Once the chicken is cooked, add the diced bell pepper and snap peas to the skillet. Stir-fry for about 3-4 minutes until vegetables are tender.
- Add the pineapple chunks and stir to combine. Cook for an additional 2 minutes.
Combine and Serve
- Serve the chicken and vegetable mixture over the cooked rice. Garnish with sliced green onions and sesame seeds if desired.
