Ingredients
  

Chicken and Toppings
  • 2 pieces Chicken Breasts boneless, skinless
  • 1 cup Pesto Sauce store-bought or homemade
  • 1 cup Mozzarella Cheese shredded
  • 0.5 cup Cherry Tomatoes halved
  • 0.25 cup Parmesan Cheese grated
  • 4 pieces Flatbreads store-bought or homemade
Seasoning
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  4. Remove from the grill and let rest for 5 minutes before slicing.
Assemble the Flatbreads
  1. Preheat the oven to 400°F (200°C).
  2. Spread a generous amount of pesto sauce on each flatbread.
  3. Top with sliced grilled chicken, mozzarella cheese, and cherry tomatoes.
  4. Sprinkle grated Parmesan cheese on top.
Bake the Flatbreads
  1. Place the assembled flatbreads on a baking sheet.
  2. Bake in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly.
  3. Remove from the oven and let cool for a couple of minutes before slicing.
Serve
  1. Slice the flatbreads and serve warm.
  2. Enjoy your delicious pesto chicken flatbread!
