Ingredients
  

Pasta
  • 12 oz Penne pasta or any pasta of choice
Chicken
  • 2 breasts Boneless, skinless chicken breasts grilled and sliced
Bruschetta Topping
  • 2 cups Cherry tomatoes halved
  • 1/4 cup Fresh basil chopped
  • 2 cloves Garlic minced
  • 1 tbsp Olive oil extra virgin
  • 1 tbsp Balsamic glaze for drizzling
  • 1/2 tsp Salt to taste
  • 1/4 tsp Black pepper to taste
Cheese
  • 1/2 cup Parmesan cheese grated

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Grill Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes on each side or until fully cooked. Remove from the grill and let rest before slicing.
Prepare Bruschetta Topping
  1. In a bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, olive oil, salt, and pepper. Mix well and set aside to let the flavors meld.
Combine Ingredients
  1. In a large pan, combine the cooked pasta, sliced grilled chicken, and bruschetta topping. Toss gently to combine.
Serve
  1. Serve the pasta warm, topped with grated Parmesan cheese and a drizzle of balsamic glaze.
