Prepare the Dough
- In a mixing bowl, combine flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs.
- Stir in milk until a dough forms. Wrap in plastic wrap and refrigerate for 15 minutes.
Make the Peach Filling
- In a saucepan, combine diced peaches, sugar, cornstarch, cinnamon, and lemon juice. Cook over medium heat until thickened, about 5-7 minutes.
Assemble the Cruffins
- Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and cut into rectangles.
- Place a spoonful of peach filling on one end of each rectangle and roll up tightly. Place in a greased muffin tin.
- Brush the tops with melted butter and sprinkle with sugar and cinnamon.
