Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1/2 cup unsalted butter cold, cubed
  • 1/2 cup milk cold
Peach Filling
  • 3 cups fresh peaches peeled and diced
  • 1/2 cup sugar
  • 1 tbsp cornstarch
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
Topping
  • 1 tbsp butter melted
  • 1 tbsp sugar for sprinkling
  • 1 tsp cinnamon for sprinkling

Method
 

Prepare the Dough
  1. In a mixing bowl, combine flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs.
  2. Stir in milk until a dough forms. Wrap in plastic wrap and refrigerate for 15 minutes.
Make the Peach Filling
  1. In a saucepan, combine diced peaches, sugar, cornstarch, cinnamon, and lemon juice. Cook over medium heat until thickened, about 5-7 minutes.
Assemble the Cruffins
  1. Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and cut into rectangles.
  2. Place a spoonful of peach filling on one end of each rectangle and roll up tightly. Place in a greased muffin tin.
  3. Brush the tops with melted butter and sprinkle with sugar and cinnamon.
Bake
  1. Bake in the preheated oven for 20-25 minutes or until golden brown. Let cool slightly before serving.
