Panda Express Orange Chicken

Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken thighs cut into bite-sized pieces
  • 1 cup all-purpose flour for coating
  • 1 cup cornstarch for coating
  • 2 large eggs beaten
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Orange Sauce
  • 1 cup orange juice freshly squeezed
  • 1/2 cup sugar
  • 1/4 cup soy sauce low sodium preferred
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons of water
  • 1 teaspoon grated ginger
  • 1 teaspoon garlic minced
  • 1/2 teaspoon red pepper flakes optional for heat
Garnish
  • 2 green onions sliced for garnish
  • 1 tablespoon sesame seeds for garnish

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine flour, cornstarch, salt, and pepper. Dip chicken pieces into the beaten eggs, then coat with the flour mixture.
  2. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the chicken in batches until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.
Make the Orange Sauce
  1. In a saucepan over medium heat, combine orange juice, sugar, soy sauce, rice vinegar, ginger, garlic, and red pepper flakes. Bring to a simmer.
  2. Once simmering, add the cornstarch mixture and stir until the sauce thickens, about 2-3 minutes. Remove from heat.
Combine and Serve
  1. In a large skillet, combine the fried chicken with the orange sauce. Toss to coat evenly.
  2. Serve hot, garnished with sliced green onions and sesame seeds.
