A popular Thai stir-fried noodle dish made with rice noodles, vegetables, and a protein of choice, tossed in a tangy sauce.

Ingredients
  

Noodles
  • 8 oz rice noodles soaked in warm water for 30 minutes
Protein
  • 1 cup chicken breast sliced thinly
  • 2 large eggs beaten
Vegetables
  • 1 cup bean sprouts fresh
  • 1 cup green onions chopped
  • 1 medium carrot julienned
Sauce
  • 3 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp tamarind paste
  • 1 tbsp sugar
  • 1 tbsp lime juice
Garnish
  • 1/4 cup peanuts crushed
  • 1 tbsp cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Prepare the Sauce
  1. In a small bowl, mix together fish sauce, soy sauce, tamarind paste, sugar, and lime juice. Set aside.
Cook the Protein
  1. Heat the wok over medium-high heat. Add a bit of oil and stir-fry the chicken until cooked through, about 5 minutes.
Add Eggs and Vegetables
  1. Push the chicken to one side of the wok, pour in the beaten eggs, and scramble until just set. Then add bean sprouts, green onions, and carrots, and stir-fry for another 2-3 minutes.
Combine Noodles and Sauce
  1. Add the soaked rice noodles to the wok along with the prepared sauce. Toss everything together until well combined and heated through, about 3-4 minutes.
Serve
  1. Plate the Pad Thai and garnish with crushed peanuts, cilantro, and lime wedges. Serve hot.
