One Skillet Salmon with Lemon Orzo

Ingredients
  

Salmon and Orzo
  • 4 fillets salmon skin-on or skinless
  • 1 cup orzo uncooked
  • 2 cups chicken broth or vegetable broth
  • 1 medium lemon zested and juiced
  • 2 tablespoons olive oil extra virgin
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup fresh parsley chopped, for garnish

Method
 

Prepare the Orzo
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Add the orzo and stir for 2 minutes to toast it slightly.
  3. Pour in the chicken broth, lemon zest, oregano, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and liquid is absorbed.
Cook the Salmon
  1. While the orzo cooks, heat the remaining tablespoon of olive oil in another skillet over medium-high heat.
  2. Season the salmon fillets with salt and pepper. Place the salmon in the skillet, skin-side down, and cook for 4-5 minutes until the skin is crispy.
  3. Flip the salmon and cook for an additional 3-4 minutes until cooked through and flaky.
Combine and Serve
  1. Once the orzo is cooked, remove from heat and stir in the lemon juice. Fluff with a fork.
  2. Serve the salmon over the lemon orzo, garnished with fresh parsley.

Notes
