Prepare the Orzo
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the orzo and stir for 2 minutes to toast it slightly.
- Pour in the chicken broth, lemon zest, oregano, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and liquid is absorbed.
Cook the Salmon
- While the orzo cooks, heat the remaining tablespoon of olive oil in another skillet over medium-high heat.
- Season the salmon fillets with salt and pepper. Place the salmon in the skillet, skin-side down, and cook for 4-5 minutes until the skin is crispy.
- Flip the salmon and cook for an additional 3-4 minutes until cooked through and flaky.
Combine and Serve
- Once the orzo is cooked, remove from heat and stir in the lemon juice. Fluff with a fork.
- Serve the salmon over the lemon orzo, garnished with fresh parsley.
