One-Pot Spinach Tomato Pasta

Ingredients
  

Pasta and Vegetables
  • 12 oz penne pasta or any pasta of choice
  • 2 cups fresh spinach washed and chopped
  • 1 can diced tomatoes 14.5 oz can, with juices
  • 1 cup vegetable broth or water
  • 1 tablespoon olive oil for sautéing
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Cook the Pasta
  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the diced tomatoes (with juices), vegetable broth, oregano, salt, and pepper. Stir to combine.
  3. Bring the mixture to a boil, then add the penne pasta. Stir well and reduce the heat to a simmer.
  4. Cover the pot and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
  5. Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.
  6. Remove from heat and let it sit for a few minutes before serving.

Notes
