Ingredients
  

Pasta and Shrimp
  • 8 oz spaghetti or any pasta of choice
  • 1 lb shrimp peeled and deveined
  • 2 cups chicken broth or vegetable broth
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
Flavorings
  • 4 cloves garlic minced
  • 1/2 cup butter unsalted
  • 1 tsp red pepper flakes optional for heat
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/4 cup parsley chopped, for garnish

Method
 

Cook the Pasta
  1. In a large pot, melt the butter over medium heat. Add minced garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.
  2. Add the chicken broth and bring to a boil. Stir in the spaghetti and cook according to package instructions until al dente, about 8-10 minutes.
Add Shrimp and Vegetables
  1. Once the pasta is cooked, add the shrimp, cherry tomatoes, and spinach to the pot. Cook for an additional 3-5 minutes until the shrimp are pink and cooked through.
Season and Serve
  1. Season with salt and black pepper to taste. Remove from heat and garnish with chopped parsley before serving.
