Method
Cook Shrimp
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add shrimp, salt, pepper, and red pepper flakes. Cook for 3-4 minutes until shrimp are pink and cooked through. Remove shrimp from skillet and set aside.
Cook Orzo
- In the same skillet, add chicken broth and bring to a boil.
- Stir in the orzo and reduce heat to a simmer. Cook for 10-12 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
Combine and Serve
- Stir in chopped spinach and cooked shrimp into the orzo. Cook for an additional 2-3 minutes until spinach is wilted.
- Remove from heat and stir in grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary.
- Serve warm, garnished with additional Parmesan if desired.
