  • 1 cup pumpkin puree canned or homemade
  • 1 cup graham cracker crumbs finely crushed
  • 1/2 cup cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup chocolate chips for coating

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine pumpkin puree, cream cheese, powdered sugar, and pumpkin pie spice. Mix until smooth.
  2. Gradually add in the graham cracker crumbs until the mixture is thick enough to form balls.
Form the Balls
  1. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  2. Place the balls on a cookie sheet lined with parchment paper.
Coat the Balls
  1. Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  2. Dip each pumpkin ball into the melted chocolate, ensuring they are fully coated.
  3. Return the coated balls to the cookie sheet and refrigerate until the chocolate is set, about 30 minutes.
