Mushroom Asiago Chicken

Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Mushrooms
  • 8 oz cremini mushrooms, sliced
Cheese
  • 1 cup Asiago cheese, grated
Cream
  • 1 cup heavy cream
Seasonings
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

Cook Chicken
  1. Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper. Cook chicken for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
Prepare Mushroom Sauce
  1. In the same skillet, add sliced mushrooms and cook for about 5 minutes until softened. Add minced garlic and thyme, cooking for an additional minute.
Make Creamy Sauce
  1. Pour in the heavy cream and bring to a simmer. Stir in the grated Asiago cheese until melted and smooth. Season with additional salt and pepper to taste.
Combine and Serve
  1. Return the cooked chicken to the skillet, coating it with the mushroom Asiago sauce. Cook for another 2-3 minutes until heated through. Serve immediately.
