Cook Noodles
- Boil a pot of water and cook the egg noodles according to package instructions. Drain and set aside.
Prepare Beef Mixture
- In a large skillet over medium-high heat, add the ground beef and cook until browned, about 5-7 minutes.
- Add the garlic, ginger, bell pepper, and carrot to the skillet. Stir-fry for another 3-4 minutes until vegetables are tender.
Add Sauce
- In a small bowl, mix together soy sauce, hoisin sauce, sesame oil, rice vinegar, and cornstarch mixture.
- Pour the sauce over the beef and vegetables, stirring to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens.
Combine and Serve
- Add the cooked noodles to the skillet and toss everything together until well combined. Garnish with chopped green onions.
