Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
Mix-ins
  • 2 cups chocolate chips semi-sweet
  • 1/2 cup mint leaves finely chopped

Method
 

Prepare the Oven and Baking Sheet
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix Dry Ingredients
  1. In a mixing bowl, whisk together the flour, baking soda, and salt.
Cream Butter and Sugars
  1. In another bowl, use an electric mixer to cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add Eggs and Extracts
  1. Beat in the eggs, vanilla extract, and peppermint extract until well combined.
Combine Mixtures
  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in Mix-ins
  1. Gently fold in the chocolate chips and chopped mint leaves.
Scoop and Bake
  1. Using a cookie scoop, drop dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until edges are golden.
Cool and Serve
  1. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes
